Here is my menu for this week. Includes from dinner 6/19 thru Lunch 6/26:

Breakfasts:

  • Cereal w/ milk and (home) frozen fruits
  • Omelets w/ (home) frozen veggies & cheese

Lunches:

  • A few frozen entrees still in freezer
  • Leftovers from Sunday, Monday, Tuesday, Wednesday nights’ dinners w/ salads
  • PB&J or sliced turkey & veggie sandwiches w/ salads

Snacks:

  • Hummus w/ celery & baby carrots
  • String Cheese & almonds
  • Grapes & String Cheese

Dinners:

(this is where I assign specific nights)

  • Sat – At a Relatives’ house: family was in town
  • Sun – Father’s Day dinner at MIL’s
  • Mon – Spaghetti w/ salad and rolls
  • Tue – Grilled BBQ Chicken Quesadillas
  • Wed – Pork Chops w/ Baked Sweet Potatoes
  • Thur – Grilled Chicken w/ Steamed Veggies
  • Fri – Pancakes w/ Eggs & bacon

Sad Reality: Saturday after shopping, we put away groceries and left to spend time with out-of-town relatives visiting. Someone left the fridge door ajar.  We returned roughly 6 hours later to find everything in the door ruined, as well as much of the interior of the fridge.  What was lost in my menu above was: hummus, cheese, string cheese, salad dressings and lots and lots of previous weeks’ purchases.  So, I am currently trying to make-do with what is left.
